This honey mustard chicken with crunchy slaw is so refreshing, crisp and satisfying. It’s a great easy dinner when you want something light but filling. And it comes together really fast.

It’s also such a good meal that you can make ahead of time for lunch! The slaw stays crunchy and crisp, the chicken is fabulous if it’s warm or chilled. You can’t go wrong!

You may be thinking that this looks familiar because I have a similar recipe with a different flavor profile. It’s exactly where I got the inspiration for this one.

The hot honey bbq chicken thighs with citrus slaw is one of your favorite recipes. Mine too! It’s very popular here on the site and for good reason: the flavor is delish and again, the texture is top notch.

You guys know how much I love honey mustard EVERYTHING. My honey mustard chicken salad is one of my favorite salads in the world. My grilled honey mustard chicken thighs are also incredible! SO I just knew that the same sort of meal would work with honey mustard flavors.

Whether you combine it and make it into a (slaw) salad or even a dish that has rice on the side, the flavors are amazing.

See, I make honey mustard chicken like this often. At least once a month. It’s an easy way to prep chicken with minimal ingredients and a ton of flavor. And I always have the ingredients in my house. 

This method comes from that one I’ve been using for almost 15 years: broiled chicken thighs brushed with apple cider vinegar and honey. I’ve talked about it so many times! Except in this case, I also add dijon to the mix. It gives it this sticky, tangy and saucy coating which is just divine. And it is SO super easy to make.

I also love when the chicken is practically charred to death, so that’s why grilling or broiling is my preferred method of making. (more…)

The texture of my pistachio cookie butter is FABULOUS. It’s wildly creamy and a little bit crunchy. I can almost describe the “crunch” as a CRISP. The mouth feel is incredible and the flavor is also great. Think pistachios, coconut oil, cocoa butter, honey, cacoa nibs… oh my yum.

You can use it any way that you’d use peanut or almond butter. It’s amazing stuffed in dates! It’s fantastic on toast. I love it with apples or bananas. And I really love it straight off the spoon.

My chili lime salmon tostadas have so much flavor, are very easy to make and absolutely delicious. They’re incredibly satisfying and you will love adding them to your menu this week.

Think: a crispy crunchy tortilla topped with guacamole, shredded lettuce, flaked buttery salmon and a lime creme.

It’s no secret just how much I love salmon – I make it at least once a week. So I am also always looking for new ways to enjoy it. At this point, it feels like I will never get sick of it, but that’s why I like to keep the variety going. Just in case! 

This salmon is so juicy, tender, buttery and EASY to make! It’s simply salmon filets seared with lots of tajin and the flavor is spot on. It’s a little savory, spicy and citrusy. Just absolutely perfect.

This is how I make it!

First up, the crispy tortilla shells. You can pan-fry these, bake them or buy them! I personally like to get corn tortillas and pan-fry them in a little bit of avocado oil. They get so super crisp, crunchy and airy while still remaining very light. If you make them this way, be sure to hit them with a sprinkle of salt at the end! 

I make the lime crema here so it can sit and develop flavor. You can make it the day ahead of time too!

Next, I cook the salmon. This is the easiest way I prepare salmon – it’s almost embarrassing. I cover it in the tajin seasoning (or any chili lime seasoning) and then sear it in a pan. THAT’S IT. If you’re using tajin, you don’t even need salt and pepper. It’s super simple and tastes fabulous. 

The last steps: make a quick guac and chop some lettuce. Then it’s time to pile the toppings on that tostada!

I spread the guacamole on the crispy tortilla, then add on the lettuce and the salmon. Throw on some green onions, drizzle on the crema… it’s perfect!  (more…)

I’m all about the easy weeknight meals right now as we get back into our routine. I want things that are simple but flavorful – and the caveat is that everyone must love them. 

The whole “green goddess” thing is one of those flavors that my kids will actually go for. It’s similar to ranch and the color is pretty, without looking too much like a vegetable, you know? While they may not be ready to top their burger with slaw, they will definitely use it as a sauce. Maybe even mixed with ketchup. I cannot lie.

This time of year is when I’m always drawn to green goddess flavors the most. The herby freshness, the creamy flavor, even the pretty color! It feels refreshing and light and delicious and can add so much to any meal.

It makes a dish feel new and fresh and vibrant, when for the majority of the last few weeks we’re eating lots of beige foods and even casseroles. 

While I’m still all about our soul-warming soups and pastas and cozy meals, I’ll gladly welcome a few fresh dishes that bring just a hint of spring. Even when it’s still three months away. Can you tell I’m counting down?!

You might be surprised to see turkey burgers here because I basically waged a war against them when I first started this site. I couldn’t help it; they were one of the very few meals Eddie made time and time again when we met and they were SO bland and plain. 

And very gray. It turned me off of them big time. 

While I’ve learned to make them in a way that tastes super good, I still will often choose chicken or beef for my burgers. So just know that is an option too! You can always swap one of those out for the turkey here.

When it comes to the toppings, give me as many as possible. 

I am such a slaw freak! It’s so crunchy and crisp and adds the perfect texture to any sandwich. It’s also such a wonderful way to add flavor, whether it’s a vinegary different one or one that complements the sandwich it’s on.

And the slaw is so customizable too. You can add some sliced bell peppers, radicchio, even celery or apple to it. It can be a clean-out-the-fridge side!

It doesn’t look like much but it lets the peppery parm salad shine and the meatball(s) stand out as the showstopper.

Plus, it tastes amazing.

My meatball salad isn’t new. If you have a copy of my second cookbook, The Pretty Dish, then you’ve probably made the meatball salad. It’s a weirdly popular recipe from the book (and a surprise to me!) and so many of you still make it on the regular. It’s a staple! 

The method of the meatball salad is still one of my favorite dishes too. I was working on that back nearly a decade ago in 2016, so pieces of it have changed for me.

I almost always make an arugula salad now. Shaved parmesan is a must!

And I usually use my ricotta meatballs because there are none I love more.

I came upon this idea back then because of leftovers. YEP. I had tons of meatballs and just grabbed one when I was making a big salad. I loved it so much – actually more than other ways I would eat meatballs. 

Groundbreaking, I know.

We love this spicy tuna bowl! It has crispy rice, cucumbers, lots of sriracha and toasted sesame seeds. It’s super easy to make and tastes amazing, plus leaves you very satisfied. Perfect for the new year!

This spicy tuna bowl is so delicious, filled with incredible crisp texture and is customizable to your tastes. It’s perfect for the new year, when you’re craving routine and vegetables but also want a meal that won’t get boring after a week. 

It’s here! I have it for you!

A disclaimer should be that I fortunately never get sick of tuna or salmon or fish in general, but this bowl specifically is one I could eat weekly. And I do! Lunch or dinner, it somehow finds its way into my menu. 

The kids love it too, minus the spiciness. That’s always a huge win in my book.

Except they keep stealing it off my plate.

I first shared this recipe a few weeks ago in my friday newsletter. If you subscribe to my substack, you know that you get exclusive recipes and a few sneak peeks like this one, as well as a bunch of other goodness. 

I had to share this one because it SAVED me in December. It is such a quick and delicious meal. When the days were so busy and I was practically eating peanut butter blossoms for breakfast, lunch and dinner, I knew I needed a fast dish that I loved. One that I actually craved, that kept me super satisfied and that tasted amazing.

This fits the bill perfectly!

First up, we have the crisp rice. I use leftover (or even freshly made) rice all the time in this way. Throw it in a skillet with some olive or avocado oil and let it get toasty, golden and crispy. It’s incredibly delish! You will not want to eat it any other way. I have an amazing recipe for it in Easy Everyday that I love too. 

Next, the tuna. I prefer tuna packed in olive oil but you can use it packed in water too – whatever your preference is, use it. There is no wrong way here.

I mix the tuna with some salt, pepper, mayo and sriracha. Again, as much or as little as you’d like. I am giving you my measurements below, but I prefer a drier tuna and am a baby, so I don’t like a ton of heat! You might want a lot more mayo and a lot more sriracha. Or something even hotter. And that’s okay. 

Finally, a little veg. I like to do cucumbers with this because it tastes so refreshing. Sometimes I’ll use my pickled onions or cucumbers too. Green onions too! But you can do any vegetable here that you enjoy, including a leftover one. Raw or roasted! Whatever you like.  (more…)

Sharing some of my favorite healthy dinner ideas with 43 weeks of menu plans! Over 300 dinner ideas to help your meal plan and prep so you can eat satisfying, nourishing dinner at home.

Happy new year!! I can’t believe it’s 2026!

This is one of my most favorite posts to share every year. Each year it’s similar but I add in/swap at least 40 to 50 of healthier meals that I really loved over the previous year and then remove the ones I wasn’t as drawn to making. I reference this post approximately ten million times over the the course of the year, especially when I’m really struggling for dinner ideas! Coming up with dinner meal plans is tricky, even for me who develops recipes for a living!

I’ve mentioned before that in our perfect weeks, planning and shopping for three full meals works best for us. This way, we don’t get sick of our “menu plan,” we always end up with leftovers (but not too many leftovers), it allows for a night or two of eating out on the fly, whether it’s both of us or one of us for work, and usually will allow one night of breakfast for dinner, which we adore. This has changed a bit with the pandemic – we’ve cooked at home SO MUCH MORE than we used to. Some weeks I did five or six meals. Some weeks I only do two and we have leftovers and take out! You have to find what works for you.

I always want to make sure our meals are super balanced, always including a vegetable, consistent and most of all – planned ahead of time. This is KEY and even I fall out of practice sometimes. But when our dinners our planned, we just generally eat BETTER.

I love all of these lunch ideas for 2026! So many of my favorite meals to make ahead for lunches – all things you can prep the day before! Tons of flavor, super satisfying and nourishing meals.

I’ve got over 100 lunch ideas for 2026 today! Lots of my faves all in one place.

Whether you are still working from home or heading into the office, these are lunch ideas for 2026 that you can make and prep ahead of time. Woohoo!

While I’m all about having a fried egg for lunch or topping my avocado toast with a fried egg or grilling and roasting some vegetables for lunch, when you work out of the home I know that just isn’t feasible. These are all dishes that you can make or prep ahead of time and ones that will taste great come lunch time.

That’s the biggest thing for me. No matter how fantastic the salad was that I would make for lunch when I sat behind a desk, whether it had croutons or last night’s chicken on top, it still tasted like a sad desk lunch and I just wanted something more delicious. Now I AM sharing a bunch of my favorite substantial salads below, but there are a ton of other lunch ideas here that range from soups to bowls to full blown meals! Eddie requires an actual MEAL, so there are some of those below too.
