This honey mustard chicken with crunchy slaw is so refreshing, crisp and satisfying. It’s a great easy dinner when you want something light but filling. And it comes together really fast.

It’s also such a good meal that you can make ahead of time for lunch! The slaw stays crunchy and crisp, the chicken is fabulous if it’s warm or chilled. You can’t go wrong!

You may be thinking that this looks familiar because I have a similar recipe with a different flavor profile. It’s exactly where I got the inspiration for this one.

The hot honey bbq chicken thighs with citrus slaw is one of your favorite recipes. Mine too! It’s very popular here on the site and for good reason: the flavor is delish and again, the texture is top notch.

You guys know how much I love honey mustard EVERYTHING. My honey mustard chicken salad is one of my favorite salads in the world. My grilled honey mustard chicken thighs are also incredible! SO I just knew that the same sort of meal would work with honey mustard flavors.

Whether you combine it and make it into a (slaw) salad or even a dish that has rice on the side, the flavors are amazing. 

We love it!

See, I make honey mustard chicken like this often. At least once a month. It’s an easy way to prep chicken with minimal ingredients and a ton of flavor. And I always have the ingredients in my house. 

This method comes from that one I’ve been using for almost 15 years: broiled chicken thighs brushed with apple cider vinegar and honey. I’ve talked about it so many times! Except in this case, I also add dijon to the mix. It gives it this sticky, tangy and saucy coating which is just divine. And it is SO super easy to make.

I also love when the chicken is practically charred to death, so that’s why grilling or broiling is my preferred method of making. (more…)

My chili lime salmon tostadas have so much flavor, are very easy to make and absolutely delicious. They’re incredibly satisfying and you will love adding them to your menu this week.

Think: a crispy crunchy tortilla topped with guacamole, shredded lettuce, flaked buttery salmon and a lime creme.

Seriously! It’s such a fun switch if you’re looking for new ways to incorporate salmon this year. And if you’re looking for new weeknight dinner ideas!

It’s no secret just how much I love salmon – I make it at least once a week. So I am also always looking for new ways to enjoy it. At this point, it feels like I will never get sick of it, but that’s why I like to keep the variety going. Just in case! 

This salmon is so juicy, tender, buttery and EASY to make! It’s simply salmon filets seared with lots of tajin and the flavor is spot on. It’s a little savory, spicy and citrusy. Just absolutely perfect.

This is how I make it!

First up, the crispy tortilla shells. You can pan-fry these, bake them or buy them! I personally like to get corn tortillas and pan-fry them in a little bit of avocado oil. They get so super crisp, crunchy and airy while still remaining very light. If you make them this way, be sure to hit them with a sprinkle of salt at the end! 

I make the lime crema here so it can sit and develop flavor. You can make it the day ahead of time too!

Next, I cook the salmon. This is the easiest way I prepare salmon – it’s almost embarrassing. I cover it in the tajin seasoning (or any chili lime seasoning) and then sear it in a pan. THAT’S IT. If you’re using tajin, you don’t even need salt and pepper. It’s super simple and tastes fabulous. 

The last steps: make a quick guac and chop some lettuce. Then it’s time to pile the toppings on that tostada!

I spread the guacamole on the crispy tortilla, then add on the lettuce and the salmon. Throw on some green onions, drizzle on the crema… it’s perfect!  (more…)

I’m all about the easy weeknight meals right now as we get back into our routine. I want things that are simple but flavorful – and the caveat is that everyone must love them. 

The whole “green goddess” thing is one of those flavors that my kids will actually go for. It’s similar to ranch and the color is pretty, without looking too much like a vegetable, you know? While they may not be ready to top their burger with slaw, they will definitely use it as a sauce. Maybe even mixed with ketchup. I cannot lie.

This time of year is when I’m always drawn to green goddess flavors the most. The herby freshness, the creamy flavor, even the pretty color! It feels refreshing and light and delicious and can add so much to any meal.

It makes a dish feel new and fresh and vibrant, when for the majority of the last few weeks we’re eating lots of beige foods and even casseroles. 

While I’m still all about our soul-warming soups and pastas and cozy meals, I’ll gladly welcome a few fresh dishes that bring just a hint of spring. Even when it’s still three months away. Can you tell I’m counting down?!

You might be surprised to see turkey burgers here because I basically waged a war against them when I first started this site. I couldn’t help it; they were one of the very few meals Eddie made time and time again when we met and they were SO bland and plain. 

And very gray. It turned me off of them big time. 

While I’ve learned to make them in a way that tastes super good, I still will often choose chicken or beef for my burgers. So just know that is an option too! You can always swap one of those out for the turkey here.

When it comes to the toppings, give me as many as possible. 

I am such a slaw freak! It’s so crunchy and crisp and adds the perfect texture to any sandwich. It’s also such a wonderful way to add flavor, whether it’s a vinegary different one or one that complements the sandwich it’s on.

And the slaw is so customizable too. You can add some sliced bell peppers, radicchio, even celery or apple to it. It can be a clean-out-the-fridge side!

It doesn’t look like much but it lets the peppery parm salad shine and the meatball(s) stand out as the showstopper.

Plus, it tastes amazing.

My meatball salad isn’t new. If you have a copy of my second cookbook, The Pretty Dish, then you’ve probably made the meatball salad. It’s a weirdly popular recipe from the book (and a surprise to me!) and so many of you still make it on the regular. It’s a staple! 

The method of the meatball salad is still one of my favorite dishes too. I was working on that back nearly a decade ago in 2016, so pieces of it have changed for me.

I almost always make an arugula salad now. Shaved parmesan is a must!

And I usually use my ricotta meatballs because there are none I love more.

I came upon this idea back then because of leftovers. YEP. I had tons of meatballs and just grabbed one when I was making a big salad. I loved it so much – actually more than other ways I would eat meatballs. 

Groundbreaking, I know. 

It’s semi-embarrassing to share such an easy recipe but it’s one that I forget about. It’s one I love to throw together for lunch or dinner for myself because it’s really satisfying, yet I go months without making it. Whyyyy do we do that? (more…)

This baked broccoli sausage tortellini is a super easy weeknight meal that the whole family will love! It comes together quickly, is so flavorful and is packed with our favorite veggie – broccoli!

Me me! This baked broccoli sausage tortellini is so satisfying and delicious. It comes together in a pinch and is an amazing weeknight meal that the whole family will love.

This time of year I always get a little burned out on holiday food – even though the holiday has not hit yet! I love sharing all the ideas and meals ahead of time in order for us all to be prepared, but I always just kind of want to eat a bowl of pasta or a pizza for dinner.

You know?! 

This hits the spot perfectly!

While I am not a huge fan of sausage myself, everyone in my family loves it, making this a big win when it comes to dinner. 

It comes together so quickly too!

Here’s how I make it: 

I brown the sausage in an oven-safe pan. I really love the le creuset braisers. 

Next, I add in the broccoli. My family likes small florets – even really tiny ones! Since they are so small, I toss them right in with the sausage and they soften nicely. We’re going to bake it anyway, so they will cook even more.

This also leaves a nice bite to the broccoli, providing a little texture.

Now here’s the thing: I don’t even boil the tortellini! I always buy refrigerated fresh tortellini and find that it will cook in the pan. But I know my tortellini and know it will cook in the oven. If you’re using a frozen tortellini here, you may want to boil it for a minute beforehand or increase the cook time in the oven. 

The tortellini goes into the same pan as the sausage and the broccoli. Next, I stir in some cheese. This another pasta dish that doesn’t have a sauce – are you seeing a trend? I never loved tomato sauce growing up but I really loved baked cheesy pastas. In this case, I add some chicken stock to give it some moisture.

Finally, I bake it for just about 15 or 20 minutes until everything is melty and golden and bubbly. It all comes together into a lovely little baked (quick!) pasta. 

I find that there is still enough moisture in this dish from the tortellini, stock, the sausage and the cheese. But if you love more of a sauce and don’t want to add a marinara, reserve ½ cup of pasta water and throw it in there with the stock before baking.  (more…)

We’re kicking things off with my favorite turkey and stuffing meatballs, giving our first Thanksgiving dish here a little twist. Woohoo! 

These turkey meatballs are made with a bit of stuffing mix and packed with flavor, so you get a juicy, tender meatball in one bite. Served over mashed potatoes with gravy? Heck yes. This is SUCH a delicious recipe and one you’ll find yourself making a lot more often than just the holiday.

Now we all know that my family is a very traditional Thanksgiving family. Any time I try to switch things up, my family freaks and frankly, I don’t blame them. I want to enjoy the classic dishes that are nostalgic; the ones we only eat one day out of the year.

So you will always find me roasting a whole turkey. But there are so many instances where this recipe for turkey meatballs is fabulous. First, if it’s just you for Thanksgiving, the turkey meatballs provide you with that cozy, comforting flavor that a regular old Thanksgiving might. It’s also a great dish if you have a smaller family and turkey is rarely the star of the show.

After all, Thanksgiving is all about the SIDES!! Side dishes for life. Most of the time I just want a big plate of side dishes! 

However, these turkey and stuffing meatballs are also a wonderful idea for Friendsgiving! That is where I like to experiment with my Thanksgiving dishes the most. Friendsgiving calls for fun, exciting twists on the classics and allows you to get creative and excited about a new dish!

The turkey and stuffing meatballs are SO dreamy with my make-ahead gravy (recipe coming this week!) and the how sweet eats mashed potatoes. I love how it tastes familiar and comforting, but can also be served a multitude of ways.

This is how I make them!

I use my classic turkey meatball recipe with a few add-ins. Garlic, some minced onion, fresh parsley, a little sage – just to name a few. 

The key is using some stuffing mix! I used to be against this because I make the best stuffing ever and never use a box mix, so it’s not something I have on hand. But let me tell you – it makes this recipe and is what allows it to be so simple and flavorful. Just buy a box for your pantry and you’ll be golden! I usually buy a bag of Pepperidge Farm stuffing mix. I moisten the stuffing with some milk and add it in.  (more…)

I live for a super simple dish like this, especially when my kids go wild for it.

This is a spin on one of our favorite easy meals, my roasted smoked sausage and peppers. In fact, I usually serve that recipe WITH rice, so it’s all right here in the pan! 

Eddie calls that my cop-out meal because I make it so frequently on busy weeknights. It’s embarrassingly easy and comes together super quick. And not sure if it’s just mine, but the kids think that the smoked turkey sausage tastes like hot dogs.

Yes, that’s right – my favorite variety of smoked sausage to use is a turkey smoked sausage. It’s easy to find at my local grocery store and we all really like it!

Here’s how it comes together!

First, I like to brown the smoked sausage in the pan. I like to get some deep golden caramelization on the sausage rounds! The more flavor, the better.

Once the sausage is browned, I transfer it to the plate. Next, I add in the onions and peppers and let them get all soft and delicious! Lots of garlic too.

As soon as the vegetables are ready, I add in some jasmine rice. I also put the sausage back in the pan and pour in some chicken stock! I’ve also used bone brother too. Remember, whatever you use here is what is going to flavor your dish the most.

I bring the mixture to a boil, reduce it to a simmer and cover it. The whole simmer situation only takes about 10 to 15 minutes! This will depend exactly on your rice, so I suggest checking it after 10 minutes and going from there.

As soon as it’s finished, I like to sprinkle in some green onions. You could also add herbs or some parmesan cheese.

This creamy tomato soup is made with fire-roasted tomatoes and served with toasted quinoa and cheese crisps. It’s so satisfying and ideal for a cozy chilly night.

I love the tradition of grilled cheese with tomato soup for Halloween! In fact, I’ve shared a tomato soup-inspired recipe almost every single year for the last decade because of it. It’s such a cozy, comforting meal and one that you can enjoy quickly! 

My nordstrom copycat tomato soup recipe is my most popular and most requested. It happens to be my own favorite too. It is silky smooth with so much flavor – the perfect balance of sweet and savory. I just made some last week! The fire-roasted tomatoes are what really get me.

A few months ago, I was looking for ways to spruce up tomato soup instead of just using grilled cheese. And this toasty quinoa idea came in. Cooked quinoa, toasted in the oven until golden and crisp, served right in the bowl with the soup. It sounded DREAMY.

As a person who desperately loves (and craves) texture, I knew it would be for me.

So I made it! This wasn’t my first go round with toasted quinoa – I’ve put it in salads and granola before and I just adore it. I love quinoa so much, in fact, that it’s a weekly staple for us. Breakfast quinoa keeps me fuller than any other dish. And that crunchy little pop gets me every time.

Since I can’t do anything in life without cheese, I also added in some cheese crisps! These were also inspo from the same recipe. I used my own tomato soup but added in cheese crisps and toasty quinoa and when I tell you it completes the meal… YUM. 

Now, that’s not to say that you can’t serve grilled cheese with this! Of course. You can do both. Or you can skip the cheese crisps and just do the sandwich. Whichever you like.

The toasty quinoa solves a big problem for me when it comes to eating tomato soup without grilled cheese. It’s just never filling enough! I need something else to fill out the meal and not only is the quinoa such a great, balanced choice, it’s easy too. 

Sure, it takes a bit of toasting. But you can even use leftover quinoa from dinner the night before or prepare it ahead of time. This is a meal that I have made ENTIRELY ahead of time

The whole dish together tastes fabulous. It also makes regular tomato soup so much more interesting. If you’re someone who feels like you’re eating tomato sauce when you eat tomato soup… this will change your mind. (more…)
