This fluffy sheet cake is so delicious, has a tender crumb and is topped with a cloud of eggnog frosting, a sprinkle of sparkly sugar and freshly grated nutmeg. It’s a little holiday dream come true!
It’s a great cake to make for a holiday party or perfect when you need that special christmas dessert. Plus, it’s shimmery and pretty!
A few years ago I started sharing a holiday cake around this time and I’ve kept up the tradition. It’s one of my favorite things to test over the year and share. And then I love to see you all making it during your celebrations!
Over the years, I’m shared many christmas cakes. It all started with my white christmas cake. Then we made a pink peppermint cake. The hot cocoa cake is definitely a huge winner and so popular!
I’ve also made a spiced orange snowball cake, a pink peppermint ice cream cake and a christmas chocolate fudge peppermint pie! Pie was new last year. Pie is not my favorite but that one is rich and decadent and lovely for the season.
This year, I’m back on the cake train and boy am I glad. Plus, a sheet cake! Easy!

Can we talk about how much I love eggnog? I freaking love it.
The thing is that I can’t really drink a whole cup of it. It’s just… too much. But I love the flavor, I adore adding it to my coffee and eggnog-flavored treats? Count me in. Sign me up. Whatever needs to happen, I’m there for the eggnog.
So I loved the idea of an eggnog cake! Initially, I wanted to do an eggnog poke cake. But that sounded too much like tres leches and why wouldn’t I just do tres leches? Then it also sounded wet. Which did not sound good.
I didn’t want layers because I can be fussy and not interested in frosting that. So I took the base of my white sheet cake and topped it with a fabulous frosting. It’s like a literal cloud of eggnog icing on top and I can’t stop eating it!
Now is probably also the time to tell you that this is an eggnog CREAM CHEESE frosting. You know, I love cream cheese frosting and it’s insanely creamy and whipped. It has such a wonderful tang. The nutmeg in the frosting is the perfect add in and the white sparkly sugar on top makes it so super pretty.
It also adds a tiny little crunch! Like a little crispy crunch. I love it!
So we have a fluffy cake with a tiny bit of texture and then… SPARKLE!
This edible spray shimmer dust is one of my favorite things. It’s not a necessity but it makes cakes and cookies look SO pretty this time of year. The silver is my favorite because it adds a neutral shimmer to everything.

Eggnog Sparkle Sheet Cake

Eggnog Sparkle Sheet Cake
Ingredients
- 2 ½ cups all purpose flour
- 3 teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon freshly grated nutmeg
- 1 ½ cups granulated sugar
- ½ cup vegetable oil
- 2 large eggs
- 2 large egg whites
- 1 tablespoon vanilla extract
- ½ teaspoon almond extract
- ⅓ cup plain greek yogurt or sour cream
- 1 cup eggnog
eggnog frosting
- 8 ounces cream cheese, softened
- ½ cup unsalted butter
- 2 cups powdered sugar
- 2 tablespoons eggnog
- 1 teaspoon vanilla extract
- white sparkle sugar, for topping
- ¼ teaspoon freshly grated nutmeg
Instructions
- Preheat the oven to 350 degrees F. Spray a 9x13 inch baking sheet or dish with nonstick baking spray - the kind with flour in it.
- In a bowl, whisk together the flour, baking powder, nutmeg and salt.
- In the bowl of your electric mixer, beat together the sugar and oil until combined. Beat in the whole eggs and egg whites. Beat in the vanilla extract and almond extract. Beat in the yogurt. Add in half of the dry ingredients, then beat in the eggnog. Finish by beating in the remaining dry ingredients until combined.
- Pour the batter into the greased baking dish. Bake for 25 to 32 minutes, or until the center is set and a tester inserted into the center comes out clean. Let the cake cool completely before frosting.

- Beat the cream cheese and butter together until creamy. Beat in the sugar until combined. Beat in the eggnog and vanilla extract. Frost the cooled cake! Top with the sparkle sugar and grated nutmeg.

Made this on the weekend for a family Christmas party and it was an absolute hit! So so moist and not too noggy for those who don’t care for egg nog. In fact, a family member remarked that they don’t like egg nog but bravely tried the cake and they loved it! Thanks Jessica for another win!
